All my soups so easy to make. I usually make 4 soups at the same time.
In one pot I cook veggies (carrots, potatoes , turnip, zucchini , butternut squash, onions, celery).
Broccoli, cilantro, and parsley are washed well and put in a special cotton bag to be cooked with the veggies. To save time, veggies are cooked whole (though may be better to cut them up into pieces prior to cooking). When ready, in 20-30 minutes, I take everything out and wait until it cools off. In the second pot, I cook split peas or lentils, soaked overnight. In the third pot, I sautee onion and mushrooms. In the fourth pot, I cook beans (any beans I find around), soaked overnight. So, in half an hour you have vegetable broth, cooked lentils or split peas, beans, sauteed mushrooms and onions, and cooked veggies. Squeeze the cotton bag with broccoli and greens and discard its content. From the cooked veggies, discard celery and onions. Puree potatoes and butternut squash in separate bowls. Zucchini, turnip, carrots, and other cooked veggies take through food processor. Now it's time to make soups. First soup. Potatoes +sauteed mushrooms and onions + broth. Second soup. Lentils or split peas or beans + veggies (after food processor) + broth. Third soup. Pureed butternut squash + veggies (after food processor) + coconut cream + broth. And so on. Be creative. Imagine combinations. Understand these principles and patterns and forget details.
